2 cups raw pumpkin seeds, soaked 2 hours and drained
1/4 cup fresh parsley, finely chopped
2 tablespoons fresh chives, minced
1 teaspoon sea salt
1/2 teaspoon dried thyme
2 tablespoons olive oil
1/4 cup filtered water
Method
1Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
2In a food processor, pulse soaked pumpkin seeds until roughly chopped but not completely smooth - some texture should remain for optimal zinc bioavailability.
3Transfer to a bowl and mix in fresh parsley, chives, sea salt, and thyme until evenly distributed.
4Add olive oil and water gradually, mixing until the mixture holds together when pressed but isn't too wet.
5Spread mixture evenly on prepared baking sheet to 1/8-inch thickness, using parchment paper to help press flat.
6Score into cracker-sized squares with a knife before baking to ensure clean breaks.
7Bake for 20-25 minutes until edges are golden and crackers feel firm - zinc content is preserved at this moderate temperature.
8Cool completely on the baking sheet before breaking along scored lines and serving immediately.
