DAO Boosting
DAO-Boosting Fresh Pea Sprout Salad for Histamine Intolerance Relief
Fresh pea sprouts naturally contain high levels of diamine oxidase (DAO), the key enzyme responsible for breaking down histamine in the digestive tract. Combined with quercetin-rich white onion and rosmarinic acid from fresh basil, this raw salad provides immediate enzymatic support while stabilizing mast cells and reducing inflammatory cytokine release.

Ingredients
◆3 cups fresh pea sprouts, rinsed and patted dry
◆1/4 cup fresh basil leaves, torn
◆2 tablespoons fresh chives, finely chopped
◆1/4 small white onion, very thinly sliced
◆2 tablespoons extra virgin olive oil
◆1 tablespoon fresh lemon juice
◆1/4 teaspoon sea salt
◆1 tablespoon hemp seeds
◆1/4 cucumber, thinly sliced
Method
1Rinse pea sprouts thoroughly under cold water and gently pat dry with clean kitchen towels. Clinical tip: Use sprouts within 24 hours of purchase for maximum DAO enzyme activity.
2Combine pea sprouts, torn basil leaves, and chopped chives in a large mixing bowl. The fresh herbs provide rosmarinic acid for additional mast cell stabilization.
3Whisk olive oil, lemon juice, and sea salt together until emulsified. Add to the sprout mixture immediately to preserve enzyme integrity.
4Gently fold in sliced white onion and cucumber. Top with hemp seeds for omega-3 fatty acids and serve immediately while enzymes are most active.
