Ingredients

β—†1 cup fresh lentil sprouts
β—†1 large cucumber, sliced thin
β—†1/4 cup fresh basil leaves, torn
β—†2 tbsp fresh oregano leaves
β—†2 tbsp fresh parsley, chopped
β—†1 tbsp fresh chives, snipped
β—†3 tbsp extra virgin olive oil
β—†1 tbsp fresh lemon juice
β—†1/2 tsp turmeric powder
β—†1/4 tsp black pepper, freshly ground
β—†1/2 tsp sea salt
Method
1Rinse pea sprouts and lentil sprouts thoroughly under cold water and pat dry gently.
2Arrange sprouts on a large serving plate as the base layer.
3Layer cucumber slices over the sprouts in an overlapping pattern.
4Scatter torn basil leaves, oregano leaves, and chopped parsley evenly over the salad.
5In a small bowl, whisk together olive oil, lemon juice, turmeric, black pepper, and sea salt until well combined.
6Drizzle the dressing evenly over the salad just before serving.
7Garnish with snipped chives and serve immediately while herbs are fresh and vibrant.
