1 cup thinly sliced cucumber
2 tablespoons fresh chives, chopped
1 tablespoon fresh dill, chopped

1 tablespoon fresh lemon juice
1/2 teaspoon ground turmeric
1/4 teaspoon black pepper
1/2 teaspoon Celtic sea salt
2 tablespoons crushed macadamia nuts
Method
1Rinse pea shoots and lentil sprouts thoroughly under cold water and pat dry gently with paper towels.
2In a large mixing bowl, combine pea shoots, lentil sprouts, and sliced cucumber.
3Add fresh chives and dill to the bowl, tossing gently to distribute herbs evenly.
4In a small bowl, whisk together olive oil, lemon juice, turmeric, black pepper, and sea salt until well combined.
5Pour dressing over the salad and toss gently with clean hands to avoid bruising the delicate shoots.
6Let salad rest for 5 minutes to allow flavors to meld.
7Top with crushed macadamia nuts just before serving to maintain crunchiness.
