DAO Enzyme Supporting Sprout & Herb Salad for MCAS

This fresh sprouting powerhouse combines DAO-enzyme supporting pea and lentil sprouts with quercetin-rich herbs and anti-inflammatory turmeric. The high concentration of fresh sprouts provides natural DAO cofactors while rosmarinic acid from basil helps stabilise mast cells.

Ingredients
β—†3 cups fresh pea sprouts
β—†2 cups fresh lentil sprouts
β—†1 cup fresh basil leaves
β—†1/2 cup fresh parsley, chopped
β—†1/4 cup fresh chives, chopped
β—†2 tablespoons extra virgin olive oil
β—†1 tablespoon fresh lemon juice
β—†1/2 teaspoon turmeric powder
β—†1/4 teaspoon ground black pepper
β—†1/4 teaspoon Celtic sea salt
β—†2 tablespoons macadamia nuts, chopped (optional)
Method
1Gently rinse pea sprouts and lentil sprouts in cool water and drain thoroughly on clean kitchen towels.
2In a large mixing bowl, combine the dried sprouts with fresh basil leaves, parsley, and chives.
3In a small bowl, whisk together olive oil, fresh lemon juice, turmeric powder, black pepper, and Celtic sea salt until well combined.
4Pour the dressing over the sprout mixture and toss gently with clean hands to distribute evenly.
5Let the salad rest for 5 minutes to allow flavours to meld and turmeric to activate with the black pepper.
6Divide between serving bowls and top with chopped macadamia nuts if using. Serve immediately while fresh.
