DAO Boosting
Low Histamine Chickpea Sprout Salad Bowl for MCAS and Histamine Intolerance
Fresh chickpea sprouts deliver concentrated diamine oxidase (DAO) enzyme activity crucial for histamine degradation, while quercetin from white onion provides natural mast cell stabilization. The rosmarinic acid in fresh basil works synergistically to inhibit histamine release via calcium channel modulation.

Ingredients
◆2 cups fresh chickpea sprouts, rinsed and patted dry
◆1/2 cup fresh parsley leaves, finely chopped
◆1/4 white onion, very thinly sliced
◆2 tablespoons hemp seeds
◆1 small cucumber, diced
◆2 tablespoons extra virgin olive oil
◆1 teaspoon fresh lemon juice
◆1/4 teaspoon sea salt
◆6-8 fresh basil leaves, torn
◆1 tablespoon fresh chives, chopped
Method
1Rinse chickpea sprouts thoroughly under cold running water and gently pat dry with clean kitchen towel - fresh sprouts provide maximum DAO enzyme activity
2Slice white onion paper-thin using mandoline or sharp knife, then soak in ice water for 5 minutes to reduce pungency while preserving quercetin content
3Whisk olive oil, lemon juice, and sea salt together in large bowl - the oleocanthal in quality olive oil provides additional anti-inflammatory support
4Add chickpea sprouts, drained onion slices, cucumber, and hemp seeds to dressing and toss gently to coat evenly
5Fold in fresh parsley, basil, and chives just before serving to preserve volatile compounds - serve immediately for optimal DAO enzyme preservation
Clinical Note
Better Kitchen is a functional nutrition companion, not a replacement for medical care. MCAS and HAT are highly individual — always introduce new foods slowly and track reactions with your allergist or immunologist.
