Ingredients
◆1 cup cooked quinoa, cooled to room temperature
◆1/2 cup fresh pea sprouts, rinsed and drained
◆1/2 cup fresh lentil sprouts, rinsed and drained
◆1/3 cup raw pumpkin seeds (pepitas)
◆1 medium carrot, julienned
◆1/2 cucumber, diced
◆2 tablespoons fresh chives, chopped
◆2 tablespoons fresh parsley, chopped
◆3 tablespoons extra virgin olive oil
◆1 tablespoon fresh lemon juice
◆1/2 teaspoon sea salt
◆1/4 teaspoon ground turmeric
◆Pinch of black pepper
Method
1Cook quinoa according to package directions and allow to cool completely to room temperature - never use hot or warm quinoa to avoid histamine formation.
2Thoroughly rinse pea sprouts and lentil sprouts in cold water, then drain well and pat dry with clean paper towels.
3In a large mixing bowl, combine cooled quinoa, fresh sprouts, julienned carrot, and diced cucumber.
4Whisk together olive oil, fresh lemon juice, sea salt, turmeric, and black pepper in a small bowl until well combined.
5Pour dressing over the quinoa mixture and toss gently to coat all ingredients evenly.
6Top with raw pumpkin seeds, fresh chives, and parsley just before serving - consume immediately while fresh.
