MCAS-Safe Sunflower Seed Hummus with Fresh Chives for Histamine Intolerance

Raw sunflower seeds provide exceptional copper content (1.8mg per cup) essential for diamine oxidase (DAO) enzyme synthesis and histamine metabolism. Fresh chives deliver quercetin and organosulfur compounds that support mast cell stabilization through NF-κB pathway inhibition. This copper-rich spread optimizes histamine clearance while providing anti-inflammatory protection for MCAS-sensitive individuals.

Ingredients
1½ cups raw sunflower seeds, soaked 4-6 hours
3 tablespoons fresh chives, finely chopped
2 tablespoons fresh lemon juice
3-4 tablespoons filtered water
2 tablespoons extra virgin olive oil
½ teaspoon sea salt
¼ teaspoon ground turmeric
2 tablespoons fresh parsley, chopped
Method
1Drain and rinse the soaked sunflower seeds thoroughly. Soaking reduces phytic acid and enhances copper bioavailability for optimal DAO enzyme support.
2Add sunflower seeds to a food processor and pulse until roughly chopped, about 30 seconds.
3Add lemon juice, 3 tablespoons water, olive oil, sea salt, and turmeric. Process for 2-3 minutes until smooth and creamy, scraping sides as needed.
4Add more water 1 tablespoon at a time if mixture is too thick. The final texture should be spreadable but not runny.
5Fold in fresh chives and parsley by hand to preserve their quercetin content and avoid over-processing.
6Taste and adjust seasoning. Serve immediately with fresh vegetable sticks or low-FODMAP crackers. Store covered in refrigerator for up to 2 days maximum.
Clinical Note

Better Kitchen is a functional nutrition companion, not a replacement for medical care. MCAS and HAT are highly individual — always introduce new foods slowly and track reactions with your allergist or immunologist.
