Ingredients
โ2 large sweet potatoes (800g), peeled and cubed
โ1 medium white onion, chopped
โ2 tsp fresh turmeric, grated
โ1 tsp fresh ginger, grated
โ1/4 tsp black pepper
โ3 cups homemade bone broth or vegetable broth
โ2 tbsp extra virgin olive oil
โ1 tsp sea salt
โ2 tbsp fresh parsley, chopped
โ1 tbsp fresh chives, chopped
Method
1Heat olive oil in a large pot over medium heat. Add chopped onion and cook for 5 minutes until translucent, avoiding browning to prevent histamine formation.
2Add cubed sweet potato, grated turmeric, ginger, and black pepper. Stir for 2 minutes to activate curcumin absorption.
3Pour in broth and bring to a gentle boil. Reduce heat and simmer for 20 minutes until sweet potato is fork-tender.
4Blend soup until smooth using an immersion blender. Season with sea salt and garnish with fresh parsley and chives before serving immediately.
