Anti-Inflammatory Bone Broth with Pea Sprouts for MCAS and Gut Healing

Ingredients
β—†500g fresh lamb bones (marrow bones preferred)
β—†1.5L filtered water
β—†1 cup fresh pea sprouts
β—†2 tbsp fresh parsley, chopped
β—†1 tbsp fresh chives, chopped
β—†1 tsp ground turmeric
β—†1/4 tsp black pepper
β—†1/2 tsp sea salt
β—†1 medium leek (white part only), sliced
β—†2 celery stalks, chopped
β—†1 tbsp extra virgin olive oil
Method
1Rinse lamb bones under cold water and pat dry. Place in a large pot with filtered water.
2Bring to a gentle simmer over medium heat, skimming any foam that rises to the surface.
3Add turmeric, black pepper, and sea salt. Reduce heat to low and simmer for 30 minutes.
4Add leek and celery to the pot. Continue simmering for 10 minutes until vegetables are tender.
5Remove from heat and strain the broth, discarding bones and cooked vegetables.
6Return clear broth to pot and reheat gently. Add fresh pea sprouts and simmer for 2 minutes.
7Remove from heat and stir in fresh parsley, chives, and olive oil.
8Serve immediately while hot. Do not store leftovers.
