Gut Healing Pea Sprout & Turmeric Bone Broth Bowl for Histamine Intolerance

Ingredients
β—†500ml fresh bone broth (chicken or beef, homemade within 24 hours)
β—†100g fresh pea sprouts
β—†1 medium carrot, diced
β—†2 celery stalks, diced
β—†1 small white onion, diced
β—†1 tsp fresh turmeric, grated
β—†1/4 tsp black pepper
β—†2 tbsp fresh parsley, chopped
β—†1 tbsp fresh oregano leaves
β—†2 tbsp olive oil
β—†Sea salt to taste
β—†1 medium courgette, diced
Method
1Heat olive oil in a large saucepan over medium heat. Add diced onion and cook for 3-4 minutes until softening.
2Add diced carrot, celery, and courgette to the pan. Cook for 5 minutes, stirring occasionally.
3Stir in fresh grated turmeric and black pepper. Cook for 1 minute until fragrant.
4Pour in the fresh bone broth and bring to a gentle simmer. Cook for 8-10 minutes until vegetables are tender.
5Add fresh pea sprouts in the final 2 minutes of cooking to preserve their DAO enzyme content.
6Remove from heat and stir in fresh parsley and oregano. Season with sea salt to taste.
7Serve immediately in bowls while hot. Do not store leftovers.
