Ingredients
β1 large butternut squash (about 2 lbs), peeled and cubed into 1-inch pieces
β3 tablespoons extra virgin olive oil
β2 tablespoons fresh rosemary, finely chopped
β1 tablespoon fresh sage, chopped
β1 teaspoon sea salt
β1/2 teaspoon freshly ground black pepper
β2 tablespoons fresh chives, chopped for garnish
Method
1Preheat oven to 425Β°F (220Β°C). Line a large baking sheet with parchment paper.
2In a large bowl, toss cubed butternut squash with olive oil until evenly coated. The oleocanthal in fresh olive oil activates at higher temperatures for enhanced anti-inflammatory effects.
3Add chopped rosemary, sage, salt, and pepper to the squash. Toss gently to distribute herbs evenly.
4Spread squash in a single layer on the prepared baking sheet, ensuring pieces don't overlap for optimal caramelization.
5Roast for 30-35 minutes, turning once halfway through, until squash is tender and edges are golden brown.
6Remove from oven and let cool for 5 minutes. Garnish with fresh chives and serve immediately while warm for optimal nutrient absorption.
