Ingredients
◆2 cups fresh lentil sprouts
◆1 cup fresh pea sprouts
◆1 medium yellow onion, diced
◆2 tbsp coconut oil
◆1 tsp turmeric powder
◆1/4 tsp black pepper
◆1/2 cup jasmine rice, rinsed
◆1 cup low-sodium vegetable broth (fresh)
◆1/4 cup fresh basil leaves, chopped
◆2 tbsp fresh oregano, chopped
◆1/2 tsp sea salt
◆1 tbsp extra virgin olive oil
◆1/4 cup fresh chives, chopped
Method
1Heat coconut oil in a large pan over medium heat. Add diced onion and cook for 5 minutes until softened and translucent.
2Add turmeric and black pepper to the onions, stirring for 30 seconds until fragrant.
3Add jasmine rice to the pan and stir to coat with the spiced oil mixture for 2 minutes.
4Pour in vegetable broth, bring to a boil, then reduce heat to low, cover and simmer for 15 minutes until rice is tender.
5Remove from heat and let stand covered for 5 minutes, then fluff with a fork.
6Gently fold in lentil sprouts and pea sprouts, allowing residual heat to warm them slightly.
7Stir in fresh basil, oregano, and sea salt.
8Drizzle with olive oil and garnish with fresh chives before serving immediately.
