Blood Sugar Stabilizing Coconut Lentil Dal for MCAS and Histamine Intolerance

Ingredients
1 cup red lentils, rinsed
1 can (400ml) full-fat coconut milk
2 cups filtered water
1 tsp fresh turmeric, grated (or 1/2 tsp powder)
1 inch fresh ginger, grated
2 tbsp fresh cilantro, chopped
1 tbsp fresh parsley, chopped
1/2 tsp ground cumin
1/4 tsp black pepper
1 tsp sea salt
2 tbsp coconut oil
1/2 cup fresh pea sprouts
2 bay leaves
Method
1Heat coconut oil in a large pot over medium heat. Add fresh ginger and turmeric, cooking for 30 seconds until fragrant.
2Add rinsed red lentils, coconut milk, water, bay leaves, cumin, and salt. Bring to a boil.
3Reduce heat to low, cover partially, and simmer for 20-25 minutes until lentils are soft and breaking down.
4Remove bay leaves and stir in black pepper. Mash lightly with a wooden spoon for desired consistency.
5Remove from heat and stir in fresh cilantro and parsley.
6Serve immediately topped with fresh pea sprouts for DAO support.
7Do not store leftovers - prepare fresh portions only.
