Ingredients
◆300g fresh chicken breast, diced
◆1 cup fresh lentil sprouts
◆2 medium carrots, diced
◆2 celery stalks, diced
◆1 medium leek, white part only, sliced
◆2 tbsp fresh oregano, chopped
◆1 tbsp fresh ginger, minced
◆2 tbsp fresh parsley, chopped
◆1 tsp turmeric powder
◆1/4 tsp black pepper
◆1 tbsp olive oil
◆3 cups filtered water
◆1/2 tsp sea salt
Method
1Heat olive oil in a large pot over medium heat. Add diced chicken and cook until just white on all sides, about 3-4 minutes.
2Add leek, carrots, and celery to the pot. Sauté for 5 minutes until vegetables begin to soften.
3Add minced ginger, turmeric, and black pepper. Stir for 30 seconds until fragrant.
4Pour in filtered water and bring to a gentle simmer. Cook for 12 minutes until chicken is fully cooked and vegetables are tender.
5Add lentil sprouts and fresh oregano. Simmer for 2-3 minutes until sprouts are just warmed through.
6Remove from heat and stir in fresh parsley and sea salt. Taste and adjust seasoning if needed.
7Serve immediately while hot for maximum DAO enzyme activity from the lentil sprouts.
