Ingredients
◆2 cups fresh broccoli sprouts
◆1 cup fresh pea sprouts
◆1 medium red onion, thinly sliced
◆2 cups fresh broccoli florets
◆1/4 cup fresh oregano leaves
◆2 tablespoons fresh thyme leaves
◆3 tablespoons extra virgin olive oil
◆1 teaspoon ground turmeric
◆1/4 teaspoon black pepper
◆1/2 teaspoon sea salt
◆2 tablespoons fresh lemon juice
◆1/4 cup fresh parsley, chopped
Method
1Heat 1 tablespoon olive oil in a large pan over medium heat.
2Add sliced red onion and cook for 5 minutes until softened and translucent.
3Add broccoli florets to the pan and cook for 4 minutes until bright green and tender-crisp.
4Stir in turmeric, black pepper, and half the salt. Cook for 1 minute until fragrant.
5Remove from heat and add fresh oregano and thyme leaves, stirring gently.
6In a large serving bowl, combine fresh broccoli sprouts and pea sprouts.
7Add the warm cooked vegetables on top of the sprouts.
8Whisk together remaining olive oil, lemon juice, and remaining salt.
9Drizzle dressing over the bowl and toss gently to combine.
10Garnish with fresh parsley and serve immediately while warm.
