Ingredients
2 cups fresh broccoli florets
1 medium yellow onion, sliced
2 celery stalks, chopped
1 cup fresh pea sprouts
1/2 cup cooked white rice
2 tbsp extra virgin olive oil
1 tsp ground turmeric
1/4 tsp black pepper
2 tbsp fresh basil, chopped
1 tbsp fresh oregano, chopped
1/2 tsp sea salt
1 tbsp fresh chives, chopped
Method
1Heat 1 tablespoon olive oil in a large skillet over medium heat.
2Add sliced onions and cook for 8-10 minutes until soft and lightly caramelized, stirring occasionally.
3Add chopped celery and cook for 3-4 minutes until slightly softened.
4Steam broccoli florets separately for 4-5 minutes until bright green and tender-crisp.
5In a small bowl, whisk remaining olive oil with turmeric, black pepper, and sea salt.
6Add steamed broccoli to the skillet with onions and celery, toss gently.
7Remove from heat and drizzle with turmeric-olive oil mixture.
8Divide cooked rice between two bowls, top with vegetable mixture.
9Garnish generously with fresh pea sprouts, basil, oregano, and chives.
10Serve immediately while fresh and warm.
