Ingredients
◆1 small fresh beetroot (about 80g), peeled and roughly chopped
◆1 frozen banana, sliced
◆2 tablespoons hemp seeds
◆1/2 cup coconut milk (canned, full-fat)
◆1/4 cup filtered water
◆1/2 teaspoon fresh ginger, grated
◆Pinch of sea salt
◆1 tablespoon pumpkin seeds for topping
◆1 tablespoon fresh blueberries for topping
◆Extra hemp seeds for garnish
Method
1Add chopped beetroot, frozen banana, hemp seeds, coconut milk, water, grated ginger, and sea salt to a high-speed blender.
2Blend on high for 60-90 seconds until completely smooth and creamy. The mixture should be thick enough to eat with a spoon but not too thick to pour.
3Pour into a chilled bowl and smooth the surface with the back of a spoon.
4Top with pumpkin seeds, fresh blueberries, and a sprinkle of hemp seeds. Serve immediately while fresh - the nitrates in beetroot are most potent when consumed fresh.
