Ingredients
β4 cups filtered water
β3 large celery stalks with leaves, chopped (about 2 cups)
β2 tablespoons fresh thyme leaves, or 1 tablespoon dried thyme
β1 medium white onion, quartered (for additional quercetin)
β2 bay leaves, fresh if available
β1 teaspoon sea salt, or to taste
β1 tablespoon extra virgin olive oil
β1/2 teaspoon fresh ginger, minced (optional, if tolerated)
Method
1Heat olive oil in a large pot over medium-low heat. Add quartered onion and cook for 3-4 minutes until fragrant but not browned.
2Add chopped celery, fresh thyme, and bay leaves. SautΓ© gently for 2-3 minutes to release aromatic compounds without destroying heat-sensitive luteolin.
3Pour in filtered water and add sea salt. Bring to a gentle boil, then reduce heat to low simmer. Cover partially and simmer for 20 minutes.
4Add minced ginger in the last 5 minutes if using. Taste and adjust salt. Strain if desired for a clear broth, or leave unstrained for maximum fiber and nutrients.
5Serve immediately while hot. Clinical tip: Consume within 2 hours of preparation to avoid histamine formation from cooling and reheating.
