Magnesium-Rich Broccoli Turkey Bowl for Migraine Prevention

Ingredients
◆400g fresh ground turkey breast
◆300g fresh broccoli florets
◆2 tbsp raw pumpkin seeds
◆1 medium carrot, diced
◆1 cup jasmine rice
◆2 tbsp fresh parsley, chopped
◆1 tbsp fresh cilantro, chopped
◆1 tsp ground turmeric
◆1/4 tsp black pepper
◆2 tbsp olive oil
◆1 tsp fresh ginger, grated
◆1/2 tsp sea salt
◆2 cups filtered water for rice
Method
1Rinse jasmine rice until water runs clear. Cook rice in 2 cups filtered water with pinch of salt. Bring to boil, reduce heat, cover and simmer 15 minutes.
2Heat 1 tbsp olive oil in large skillet over medium heat. Add diced carrot and cook 3 minutes until slightly softened.
3Add ground turkey to skillet, breaking apart with wooden spoon. Cook 6-8 minutes until turkey is cooked through and no longer pink.
4Steam broccoli florets in steamer basket over boiling water for 4-5 minutes until bright green and tender-crisp.
5Add grated ginger, turmeric, black pepper and salt to turkey mixture. Stir and cook 1 minute until fragrant.
6Remove rice from heat and let stand 5 minutes. Fluff with fork and stir in remaining olive oil.
7Divide rice between two bowls. Top with turkey mixture and steamed broccoli.
8Sprinkle with pumpkin seeds, fresh parsley and cilantro before serving immediately while hot.
