Ingredients
â2 cups fresh broccoli sprouts
â1 cup fresh pea sprouts
â1 cup fresh broccoli florets, finely chopped
â1/2 small red onion, thinly sliced
â1/4 cup fresh parsley, chopped
â2 tablespoons fresh chives, chopped
â1/4 cup macadamia nuts, chopped
â3 tablespoons extra virgin olive oil
â2 tablespoons fresh lemon juice
â1/2 teaspoon turmeric powder
â1/4 teaspoon fresh cracked black pepper
â1/2 teaspoon sea salt
â1 tablespoon fresh thyme leaves
Method
1Rinse broccoli sprouts and pea sprouts thoroughly under cold water and pat dry gently with paper towels.
2Finely chop the raw broccoli florets into small, bite-sized pieces to maximize sulforaphane availability.
3Thinly slice the red onion and soak in cold water for 5 minutes to reduce sharpness, then drain well.
4In a large mixing bowl, combine the broccoli sprouts, pea sprouts, chopped broccoli florets, and drained onion slices.
5Add the fresh parsley, chives, and thyme leaves to the bowl.
6In a small bowl, whisk together olive oil, lemon juice, turmeric, black pepper, and sea salt until well combined.
7Pour the dressing over the salad and toss gently to coat all ingredients evenly.
8Top with chopped macadamia nuts and serve immediately while sprouts are crisp and fresh.
