Ingredients
1/2 cup raw pumpkin seeds (pepitas)
1 cup white rice, cooked and cooled
1 medium courgette, diced
1/2 cup fresh green beans, trimmed and chopped
2 tbsp extra virgin olive oil
1/4 cup fresh parsley, chopped
2 tbsp fresh chives, chopped
1 tsp fresh rosemary, minced
1/2 tsp sea salt
1/4 tsp ground ginger
2 cups low-sodium vegetable broth (homemade preferred)
Method
1Heat 1 tablespoon olive oil in a large pan over medium heat (325°F). Add pumpkin seeds and toast for 3-4 minutes until lightly golden, stirring frequently to prevent burning.
2Add diced courgette and green beans to the pan. Sauté for 5-6 minutes until vegetables are tender but still crisp. Season with sea salt and ginger.
3Warm the cooked white rice gently in a separate pan with 2-3 tablespoons of vegetable broth for 2-3 minutes until heated through.
4Divide the warm rice between two bowls. Top with the sautéed vegetables and toasted pumpkin seeds.
5Drizzle with remaining olive oil and sprinkle with fresh parsley, chives, and rosemary. Serve immediately while warm for optimal nutrient absorption.
